Christmas Cookies -- Hazelnut Blondies

Ingredients
For the Hazelnut Butter:
  • 4 oz. hazelnuts, toasted with (most of) the skins rubbed off
  • 1 T honey or golden syrup
  • ½ tsp. salt
For the blondies:
  • 1 cup (2 sticks, 8 oz.) salted butter
  • 1¾ cups sugar
  • 1 cup hazelnut butter
  • 2 large eggs plus 1 large yolk
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 pinch salt
  • ¾ cup milk chocolate chips
  • ¾ cup dark chocolate chips
Instructions
Make the Hazelnut Butter:
  1. Place the toasted, skinned nuts in the food processor, process until chunky, add the honey and the salt, and continue to process until smooth.
Make the Blondies:
  1. Preheat oven to 350 degrees. Grease and flour a 10 X 13 inch baking pan.
  2. In a mixer at medium speed, cream the butter and sugar until fluffy. Add the hazelnut butter and beat until incorporated. Add the eggs, egg yolk and vanilla and beat to combine. Reduce the speed to low, add the flour and salt and beat until just combined.
  3. Add the chocolate chips and stir in by hand. Spread the batter into the prepared pan.
  4. Bake 40 minutes, or until a toothpick comes out clean. Let cool in the pan, then cut into squares.
  5. You can top these with additional melted semisweet chocolate, spread on prior to cutting.
