Roasted Green Beans with Herbs and Scallions

Ingredients
  • 2 lbs. green beans, preferably haricots verts, tops and tails removed
  • 30 scallions, white and light green parts only, roots removed and halved vertically
  • 2 Tablespoons minced fresh sage leaves
  • 1 tsp. minced fresh rosemary leaves
  • 1 tsp. minced fresh thyme leaves
  • 6 cloves garlic, sliced lengthwise
  • ⅓ cup olive oil
  • 1 Tablespoon kosher salt
Instructions
  1. Preheat oven to 375 degrees.
  2. In large bowl, toss all ingredients together. Spread them on a large rimmed baking sheet, lined in foil.
  3. Bake for one hour, stirring every 15 minutes (I found tongs to be the easiest way to stir). Serve warm.
