Miso Pork Tenderloin with Apple Ginger Relish

Ingredients
  • For the pork:
  • 1 Opal Apple
  • 2 Tablespoons white miso
  • ¾ inch fresh ginger stem
  • 1 Tablespoon soy sauce
  • Juice 1 lime
  • 1 pork tenderloin, about 2 lbs.
  • 2 Tablespoons neutral oil
Instructions
  1. Combine the apple, miso, ginger, soy sauce and lime juice in a food processor and process until the apple is very finely chopped - almost pureed, and all the ingredients are incorporated.
  2. Place the pork and the marinade in a ziploc bag, turn to coat, and marinate in the refrigerator at least 3 hours.
  3. Preheat oven to 350 Degrees.
  4. In a large skillet, heat the oil. Brown the pork on all sides, about 4 minutes a side, then transfer to a roasting pan and continue to roast in the oven until the internal temperature of the pork is 145 degrees, about 20 minutes. Let the pork rest for 10 minutes, then slice into medallions and serve with apple ginger relish.
