Spinach Sweet Potato Soup

  • 4 Tablespoons butter
  • 1 onion
  • 4 cloves garlic
  • 1 small sweet potato, peeled and cut into chunks
  • 1 small apple, peeled and cored and cut into chunks
  • 2 cups chicken broth
  • 2 cups milk
  • 12 oz fresh spinach
  • ¼ tsp grated nutmeg
  • salt to taste
  1. In a large lidded saucepan, melt the butter over medium heat.
  2. Peel and chop the onion and mince the garlic. Add to the butter and saute until translucent.
  3. Add the potato and the apple, saute for a minute, then add the chicken broth, reduce the heat to low, cover the pot and cook about 5 minutes until the sweet potato starts to soften.
  4. Add the milk and the spinach, cover and simmer about 15 minutes.
  5. Transfer soup to a blender, blend until smooth. Add nutmeg and salt to taste.
