Ingredients
2 lbs rhubarb (about 10-12 stalks), trimmed and cut into smallish pieces
1.5 L water (about 6 and a quarter cups)
1.5 cups sugar
Instructions
Place the rhubarb and the water in a large pot, bring to a boil, and let simmer until the rhubarb pieces fall apart, skimming off any foam that develops on the surface.
Strain the rhubarb through cheesecloth or a fine mesh sieve, reserving the liquid.
Return the liquid to the pot and add the sugar. Bring to a boil and simmer until the sugar is dissolved. Decant into glass bottles, and store in the refrigerator.
