Chocolate Oatmeal Cookies

Ingredients
  • 1 cup salted butter, softened
  • 1 cup white sugar
  • ½ cup brown sugar, packed
  • ¼ cup molasses
  • 1 egg
  • 1 tsp vanilla extract
  • 1½ cups AP flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. ground cinnamon
  • 1 Tbsp. ground cocoa powder
  • 1½ cups rolled oats
  • ¾ cup chopped walnuts, toasted
  • ¾ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream the butter and add the sugars, beating until fluffy.
  3. Beat in the molasses, the egg and the vanilla.
  4. Add the flour, soda, salt and spices, and stir until thoroughly combined.
  5. Add in the oats, nuts and chocolate chips and mix in with a wooden spoon.
  6. Form the cookies into generous balls (a little larger than walnuts, but definitely smaller than golf balls), and set on a baking sheet lined with parchment or silpat.
  7. Bake in the preheated oven for 10 minutes. The cookies will puff up, and sink when they're cool. That's a good thing. It doesn't mean they're underbaked. It means they're chewy.
  8. Let cool on the sheet for about 5 minutes, then move to a rack.
