8 small slices bread (I use Whole Wheat Tuscan Pane from Trader Joe's, cut in half. It's kind of like a dense ciabatta. I usually make French toast with whatever whole wheat sandwich bread is sitting around the house)
Butter
Toppings -- maple syrup or golden syrup (my favorite)
Instructions
In a wide and shallow bowl, beat the eggs lightly with a fork. Add the pumpkin, cream, maple syrup, spices and salt, and stir to combine. Soak the slices of bread in the egg mixture, flipping to ensure that both sides absorb the eggs.
Melt some butter on a griddle or nonstick skillet, and saute each slice of soaked bread in the melted butter, flipping when the first side is brown - 1-2 minutes per side. Serve warm with additional maple syrup or golden syrup or your french toast topping of choice.
