Salmon with Curried Spinach

  • 1 lb. salmon filet
  • ¼ c. teriyaki sauce
  • ¼ cup chopped scallions or leeks
  • ½ large or 1 small apple
  • 2 Tablespoons olive oil
  • ¼ c. golden raisins
  • 1 Tablespoon mango chutney
  • 1 teaspoon curry powder (I like Sun Brand Madras Curry Powder)
  • 2 Tablespoons red wine or sherry vinegar
  • 10 ounces baby spinach
  1. Preheat oven to 400 degrees.
  2. Remove the skin from the oven, section the filet into portions, place the portions in a baking dish and coat each portion with teriyaki sauce. Place the salmon in the oven and bake for 10 minutes.
  3. Chop the apple and the scallions.
  4. In a large skillet, saute the scallions or leeks in the oil over medium heat until softened. Add the apples and the raisins, and saute for two minutes. Add the chutney, curry powder and vinegar, then add the spinach and saute until wilted.
  5. Serve the salmon on top of the spinach.
