Rhubarb Compote

Ingredients
  • 2 cups chopped rhubarb
  • ⅓ c. sugar
  • ½ tsp vanilla.
Instructions
  1. Combine all ingredients in small saucepan. Cook over low heat, stirring frequently, until the rhubarb has broken down and the mixture is the texture of chunky applesauce. Chill.
