Roasted Green Beans with Herbs and Scallions

- 2 lbs. green beans, preferably haricots verts, tops and tails removed
- 30 scallions, white and light green parts only, roots removed and halved vertically
- 2 Tablespoons minced fresh sage leaves
- 1 tsp. minced fresh rosemary leaves
- 1 tsp. minced fresh thyme leaves
- 6 cloves garlic, sliced lengthwise
- ⅓ cup olive oil
- 1 Tablespoon kosher salt
- Preheat oven to 375 degrees.
- In large bowl, toss all ingredients together. Spread them on a large rimmed baking sheet, lined in foil.
- Bake for one hour, stirring every 15 minutes (I found tongs to be the easiest way to stir). Serve warm.
