Apple Ginger Relish

- 1 Opal Apple, peeled and cored
- 1 inch fresh ginger stem, peeled
- 2 scallions, light and dark green parts only
- ½ tsp sesame oil
- 1½ tsp seasoned rice vinegar
- Juice 1 lime
- Finely mince the peeled, cored apple, the ginger and the scallions. Toss with sesame oil, rice vinegar, and lime juice.
