Roasted Parsnips

  • 2 lbs parsnips
  • 2-3 Tablespoons olive oil
  • 1 tsp salt
  • pepper
  1. Preheat oven to 400 degrees.
  2. Peel the parsnips (like you would a peeler), and using a mandoline, cut them into ¼ inch thick slices.
  3. Toss the parsnip slices with the olive oil, arrange on a flat baking sheet, and sprinkle with salt and pepper.
  4. Roast for 30 minutes, turning them/stirring them after 15 minutes or so to ensure even browning. Start checking after 20 minutes to see if they're the right color/texture.
