Ingredients
  • 2 ounces smoky bacon, diced
  • 1 medium onion, diced
  • 2 pounds green beans, trimmed
  • 6 tablespoons white wine vinegar (cider vinegar also works)
  • Salt and freshly ground black pepper
Instructions
  1. Preheat the oven to 200 degrees.
  2. Place the bacon in a 3-quart oven proof pan over medium heat. Add the onion and cook until the bacon and onion are lightly browned. Stir in the beans, vinegar, and 1 cup water and bring to a simmer. Season to taste with salt and pepper.
  3. Place in the oven, and bake, covered, for at least 2 hours (I ended up cooking for 3, but the first two were uncovered, which slowed the cooking process), basting from time to time, until the beans are very tender.
  4. Serve immediately or remove from the oven and reheat just before serving.
